CARRAGEENAN: Carrageenan KA type that we manufacture is a compound of carrageenan and a little density agent. This special carrageenan formula is a form of food additive for meat products. It works in meat products to effectively strengthen water preservation, improve elasticity and dice function. We produce two kinds of carrageenan KA type: the rolling-rubbing type and the injection type. Rolling-rubbing type's amount of usage: 0.5 ~ 0.7%. Injection type's amount of usage: 1 ~ 1.8% Carrageenan KB type is a compound powder specially used for manufacturing gummy candy. With little amount, it makes Panocha temperature between freezing and infusion. It does not stick to teeth and not influenced by season. Amount of usage is between 0.8% and 1.5%. Carrageenan KC type, a compound powder specially used for manufacturing jelly and pudding. Jelly and pudding made from agar-agar are firm and not as elastic. In addition, the cost of agar-agar powder is higher than carrageenan KC type powder. Carrageenan KD type is a compound powder specially used in ice cream. It incorporates the functions of emulsifier and stabilizer. It completely replaces protein products and all kinds of emulsifying & stabilizing agents (eg. gelatin, cmc, algae acid sodium, etc.) in ice cream recipe. Carrageenan KE type is a compound powder is specially formulated as a food additive to make cold dishes. Cold dishes are a form of favorite delicacy for the Chinese. It is very convenient to make cold dishes with this powder and our recipe. Amount of usage is approximately 1%.
